These homemade chicken fries feature tender strips of chicken breast seasoned with garlic powder, onion powder, thyme, and parsley, then coated in a golden, crispy breadcrumb shell. You want the chicken to be mostly frozen when you start prepping. It’s OK if it’s not but it will be easier to work with. Slice each chicken breast into ¼-inch strips. If you think the strips are too long, or simply want more strips, cut them in half.

Add the chicken to a mixing bowl and sprinkle with sugar and salt, toss to coat.

Next, create an assembly line. Add cornstarch to one shallow bowl. Whisk the eggs in another shallow bowl. Combine the breadcrumbs, garlic powder, onion powder, thyme, parsley, and pepper in another shallow bowl. This is how you’ll work; cornstarch to egg to breadcrumb.

Working one piece of chicken at a time, dip into the cornstarch and fully coat. Then move to the egg mixture and fully submerge. Lastly, dredge in the breadcrumb mixture and press down slightly to ensure all sides are coated. Place on a baking sheet or wax paper or perhaps a plate and repeat until all chicken fries are coated.

Preheat the oven to 250 degrees F and line a baking sheet with paper towels. You want to use paper towels, not parchment paper, so excess grease is absorbed. Also add about 1-inch of oil to a large skillet and heat over medium heat. Once the oil is ready, work in batches to fry the chicken until golden brown and cooked through, about 4 minutes per side. The internal temperature should be 165 degrees F. Transfer the cooked chicken to the prepared baking sheet and keep warm in the oven while you work on the next batch.
